This isn't really a recipe so much as it is a guideline so that when I forget I can look it up here.
Pierce the squash with a skewer all over - so it doesn't explode.
Bake at 375 for one hour.
When its cool enough to handle, slice it lengthwise.
Scoop and discard the seeds (unless you have other plans for them). Then scrape the flesh with a fork and voila! There is spaghetti squash for your enjoyment.
I like to top it off with red sauce and mozzarella but one could do almost anything with it that one desires.

Cucumber and Tomato Salad
From Cheryl
4 cucumbers, diced
4 tomatoes, diced
1 bunch of green onions, thinly sliced
Juice of 4 lemons
Salt & pepper to taste
Combine and enjoy!

Bean Salad
From friends of friends, Sri Lanka
3 cans of any beans you like (I used 2 black, 1 lima)
1 onion, diced
1 green pepper (I used poblano)
1/2 c white vinegar
1/2 c EVOO
1/2 c sugar
salt & pepper to taste
